TASTING NOTES
LOOK: Clear and shiny appearance. Cherry-red colour with a violet rim.
SMELL: Hints of black fruits, blackberries and plums. With spicy notes and aromatic touches of vanilla and liquorice that lend it complexity.
TASTE: Powerful, with rounded tannins that give rise to a silky and clear wine with refreshing varietal characteristics. Notes intertwined with the smoky notes of fine wood. Very pleasing to the palate, with a fruity aftertaste where blackberry and liquorice predominate, giving way to a final spicy finish.
SERVING TEMPERATURE: From 12 ºC to 14 ºC.
CONSUMPTION: Optimal point for consumption. It is advisable to decant the wine 30 minutes before serving as there may be sediments that in no way affect the quality of the wine, as a result of its natural production process.
PAIRINGS: Ideal for accompanying all kinds of meat such as grilled meat, roast baby lamb, stews, casseroles and hard cheeses.
VINEYARD AND PRODUCTION
DESCRIPTION: Within the municipal boundaries of Pesquera de Duero, facing south at an altitude of more than 800 metres.
SURFACE AREA: 200 hectares in total.
AGE: Average of 25 years.
SOIL: Sandy loam.
CLIMATE: 2017 was warmer than usual. The first frosts did not arrive until November and December, with higher winter temperatures during the latter month. The beginning of spring came with cooler temperatures than expected. Nevertheless, bud break took place as normal. The average temperature since June was high, reaching normal ranges in August. As in previous years, the harvest took place in September.
HARVEST: The harvest was healthy and of an exceptional quality.
AGEING: Aged 18 months in American oak barrels, plus 6 months of refinement in the bottle.
