VARIETY: 100% Tempranillo
APPEARANCE: Intense garnet with a ruby edge, clean and bright.
NOSE: Aromas of black liquorice and plum jam. Balsamic notes, with hints of cocoa, tobacco leaf and vanilla.
PALATE: Forthright on entry, giving way to a mouthfeel of elegant complexity. Balsamic notes and black liquorice can be appreciated. Persistent finish and aftertaste.
SERVING TEMPERATURE: From 12º C – 14º C.
CONSUMPTION: Long-ageing wine ready to be enjoyed or for ageing in the bottle.Decant 30 minutes before serving to oxygenate. It may contain sediments as it has not undergone any filtration process to get a more natural wine, but this does not affect the quality of the wine.
FOOD PAIRING: Grilled red meat, small game birds and ground game, such as partridge and hare.
VINEYARD AND WINEMAKING
DESCRIPTION: Vineyards leased in agreements with local winegrowers. Located at an altitude between 750 and 650 metres on semi-flat terrain running downward from north to south, facing south.
SURFACE AREA: 80 hectares.
AGE: Average of 25 years.
SOIL: Sandy and clay mix throughout.
CLIMATE: Region with a very dry climate and very extreme temperatures, perfect for winegrowing, with rainfall that rarely exceeds 400 mm per year and temperatures that rise above 45 ºC in summer and drop below -10 ºC in winter.
VINIFICATION: De-stemming and fermentation in stainless steel.
AGEING: 24 months in American oak barrels and 12 months resting in the bottle.
