TASTING NOTES
LOOK: Garnet with a ruby edge, clean and bright.
SMELL: Aromas of ripe plum, cherries and kirsch. Notes of cocoa, hazelnuts and toe. Balsamic and spicy with cinnamon overtones.
TASTE: Smooth entry, full and smooth bodied, with a long aftertaste of ripe black fruit and vanilla.
SERVING TEMPERATURE: 12º – 14º
CONSUMPTION: Long-ageing wine suitable for ageing in the bottle. Decant 30 minutes before serving to oxygenate. May contain sediment due to it not being filtered to produce a more natural wine, this does not affect the quality of the wine.
PAIRINGS: Grilled red meat, small game birds and ground game, such as partridge and hare.
VINEYARD AND PRODUCTION
DESCRIPTION: Situated at an altitude of between 650 and 750 metres on semi-flat land sloping north to south and south facing.
SURFACE AREA: 52 hectares.
AGE: Average of 50 years.
SOIL: Sandy and clay mix throughout.
CLIMATE: The 2016 vintage in La Mancha can be summarised as high quality and low quantity. Growing conditions were marked by a colder and drier winter than usual, whereas spring was milder and drier than average, the vine-growing cycle finished with a very hot summer -punctuated with heat waves in July- and despite rainfall at normal levels, given ‘normal’ means scarce, the overall hydric balance was in deficit.
VINIFICATION: De-stemming and fermentation in stainless steel.
AGEING: 24 months in American oak barrels and 12 months resting in the bottle.
