PAIRINGS: Roast suckling lamb and pig, red meat stews and small game dishes such as pheasant with plums.
VINEYARD AND PRODUCTION
DESCRIPTION: Vineyards located to the southwest of the province of Zamora, on the Dehesa la Granja estate, with a total area of 800 hectares of crops (120 of which are vineyards).
AGE: Average of 25 years.
SOIL: Formed by sedimentary sandstone, clay and limestone, which give rise to limestone soils on the surface. Loamy materials alternate with coarse and fine-grained sandstone. Altitude of the vineyard: 620–750 m.
CLIMATE: Extreme continental climate with arid Atlantic influences. Annual rainfall between 350–400 mm. The annual average temperature was 12 ºC–13 ºC. An extremely cold winter and a great number of hours of sunshine gave rise to exceptional grape quality, which is essential to make great wines.
VINIFICATION: A traditional vinification process is used to make this wine.
AGEING: 24 months in American oak barrels.
